Certosa di Pontignano Vintage 2005
The first Chianti Classico Certosa di Pontignano
came to life from a project of collaboration between
the University of Studies of Siena and Dievole for the
reconstruction of an Agro-environmental park, within
the walls of the Certosa of Pontignano. It is a blend of
Polyclonal Sangiovese harvested in wooden crates of 15
kg after a very acute selection.

Land composition: schist clay (Alberese galestro)
Support system: supported using the “Cordone
Speronato e Ventaglio” system
Density of panting: over. 6000 / hectare
Age of vines: 5 years
Yield in hectares: 60 q.al
Average production per plant: 1 kg
Time of harvest: halfway through September – end September
Alcoholic grade: 13.00 % vol
Total acidity: 5.76 g/l
Residual sugars: 1.4 g/l
Dry extract: 28 g/l
Maceration in small casks of 80 hl for 10 days.
Pre-maceration for 3 days at 6°.
The maceration continues until 25°.
Spontaneous Malolactic fermentation.
In oak casks and a small percent in French
oak barriques for 6 months.
Refining in bottle for approximately 6 months.
Colour: intense ruby red.
Perfume: frutty and fresh, cherry and cassis.
Taste: dry, with a good structure with tannins,
smooth and full.
Serving suggestion: pasta with traditional sauces,
grilled meat.
Temperature for serving: 18° preferably open 1
hour before serving.
Bottles produced: 6.600 bottles of 0.750 lt.
Packaging: cases of 6 bottles.
